Josh has been creating and curing charcuterie for more than 15 years from coast to coast, prior to starting his own venture. Having worked at some of the finest brands in the world including Dean & Deluca, Four Seasons Hotels and the Nobles Restaurant Group, Josh knows how to build a world-class operation and food safety is a critical component of that. Josh considered a variety of options for pathogen testing at New England Charcuterie. "I love the Sample6 technology and believe that time to results are critical. Also it needs to be easy. I want my team to focus on creating the world’s best charcuterie." says Josh Smith. With this in mind, New England Charcuterie integrated Sample6 DETECT and Sample6 CONTROL into their operation in September of this year.
