Our latest customer success story is New England Charcuterie.  New England Charcuterie, located in Waltham, MA, recently adopted both Sample6 DETECT and Sample6 CONTROL.

Chef owner and entrepreneur, Joshua Smith prides himself on building an operation on the cutting edge with regard technology and quality, while preserving the art of traditional charcuterie. In February of this year, Smith opened New England Charcuterie inside Moody’s Delicatessen and Provisions.  They are the first facility in the state licensed to make, cure and sell aged meats.  sample6_success_story

Josh has been creating and curing charcuterie for more than 15 years from coast to coast, prior to starting his own venture.  Having worked at some of the finest brands in the world including Dean & Deluca, Four Seasons Hotels and the Nobles Restaurant Group, Josh knows how to build a world-class operation and food safety is a critical component of that. Josh Smith noted that from his time with the Nobles Restaurant Group, " Chef Ray nurtured my steadfast commitment to an organized kitchen and unwavering kitchen hygiene."

Josh considered a variety of options for pathogen testing at New England Charcuterie. "I love the Sample6 technology and believe that time to results are critical. Also it needs to be easy. I want my team to focus on creating the world’s best charcuterie." says Josh Smith.  With this in mind,  New England Charcuterie integrated Sample6 DETECT and Sample6 CONTROL into their operation in September of this year.   

New England Charcuterie is the first Sample6 customer with both a wholesale and retail business. CEO Tim Curran notes, "Bringing food safety to retail has always been an important objective of ours. We see tremendous opportunity in ready to eat meats."
